- About an hour west of Kampala, the capital of Uganda, we passed an open-air market on the roadside. As a community health doctoral student, my research focuses on the nutrition transition in Sub-Saharan Africa, where rapid development and changing dietary patterns have lessoned malnutrition even while contributing to chronic diseases such as obesity and diabetes. This picture shows the incredible quality and abundance of the produce that has composes a traditional diet, with pumpkins, avocados, cabbages, onions, jackfruit, cassava, eggplant, potatoes, and tomatoes. Our group uses Geographic Information Systems (GIS) to geocode the location and availability of food markets, stores, and restaurants, documenting how environmental changes may impact risk of chronic disease. We have shown obesity rates in Uganda are impacted by not only wealth and education, but also by regional cash-crop production and political stability. Diet is one of the most crucial modifiable risk factors for preventing chronic disease, but is set within the larger context of production, infrastructure, availability, and the political landscape.
