- Food and nutrition policies are designed to improve food choice behaviors as a means to improve long-term health outcomes. Many policies are targeted to address global challenges like obesity and food insecurity. School nutrition programs, for example, provide nutrition assistance to reduce children’s hunger and improve nutrition security. As another example, nutrition labels are mandated on products in an effort to promote healthier choices, which can be accomplished on the consumption side (e.g., consumers choosing healthier options) or the production side (e.g., requiring a label induces food manufacturers to produce healthier products). Evaluating such policies is necessary to determine whether the policies have improved food behaviors or health outcomes as intended. In my dissertation research, I evaluate the impacts of two policies related to food and nutrition: the universal Free School Lunch Program in South Korea and the recently modified Nutrition Facts label in the United States.
