- You are what you eat, yes, but also, you eat because of who you are. How do you know how to eat? What foods do you like or dislike? What utensils did you learn to use and how? How can you tell if you are hungry or full? Mealtimes are poignant learning experiences for children but are often overlooked as such. Many children develop, grow, and learn within childcare settings. As children learn how to eat, childcare providers create and guide them through some of their first experiences with foods. There is very little research about how children develop food preferences, eating habits, and eating behaviors within the early care and education environment. Through observing mealtimes, my research aims to expand our understanding of the role played by childcare settings as a potential determinant of childhood obesity and facilitate a new direction of research aimed at advancing feeding guidelines and recommendations to improve nutrition environments for children. In this picture, I see a child engaged in complex learning about something as simple as a carrot slice. I marvel at the potential power of these small moments in shaping who we become, how we eat, and our lifelong relationship to food.
